🌶️ Amazing Chutney Recipe

(Chana Dal / Toor Dal / Peanut Based)

This versatile and flavorful chutney can be made with chana dal, toor dal, split chickpeas (roasted or unroasted), or even peanuts. You can also experiment with onions or tomatoes to customize the flavor to suit your taste or regional traditions.

  • Ginger – A small quantity, finely chopped

  • Green Chillies (3–4) – Thai green chillies are preferred for their spiciness
    – Alternative: Use dry red chillies instead. Lightly fry them on low heat to bring out a deeper flavor and give the chutney a rich reddish hue.
    – Tip: For more heat, simply increase the quantity of chillies (green or red).

  • Chana Dal or Toor Dal – 1 cup
    – Lightly roast in oil until golden or light reddish in color


🌿 Optional (but recommended) Add-ons:

  • Coriander leaves & curry leaves – Both are highly recommended for flavor

  • Coconut – Fresh or dry; a must-have ingredient

  • Peanuts – Roasted, especially if you're not using dal

  • Cashews or raisins – For a touch of richness and sweetness

  • Tomato – Optional, balances spice and adds body

  • Tamarind juice – Optional, enhances tanginess and helps cut spice if needed

  • Salt – To taste


❄️ Preparation Tips:

  • If using frozen coconut, ensure it doesn’t have a stale odor. Leave it out at room temperature for 20–30 minutes. Avoid microwaving.

  • Always dry roast or lightly fry the dal (or peanuts) and chillies beforehand. This boosts both taste and texture.


⚙️ Blending Instructions:

  1. Add all prepared ingredients to the mixer jar.

  2. Run the mixer briefly on the first (low) speed.

  3. Open the lid and clear off any chutney sticking to the sides or top.

  4. Add a small amount of water, depending on the thickness you prefer.
    – Tip: Start with a thick chutney—you can always thin it out later.

  5. Add salt to taste.

  6. Close the lid and blend again for 1–2 minutes until smooth.

  • Stop the mixer, take a small amount using a spoon or clean hand, and taste.
    – Important: If you've licked the spoon or your hand, please wash it thoroughly before using again.

  • If too spicy, adjust by adding any of the following:
    – More coconut
    – A piece of tomato
    – A splash of tamarind juice

Run the mixer one final time to bring everything together into a smooth, flavorful chutney.

🔥 Seasoning (Tadka / Tempering)

For the final touch, prepare a flavorful seasoning using the following ingredients:

  • Mustard seeds

  • Cumin seeds

  • Hing (asafoetida) – just a pinch

  • Chana dal

  • Urad dal

  • Curry leaves

  • Dried red chillies – cut into pieces

How to sauté:
Heat a small amount of oil in a pan.
Add mustard seeds and let them splutter. Then add cumin seeds, hing, chana dal, urad dal, and red chillies. Sauté on medium heat until the dals turn golden brown and the chillies deepen in color.
Finally, add curry leaves (be careful, as they may splutter) and switch off the heat.

Pour this aromatic seasoning over the chutney before serving.

Tip: No special trick—just sauté with attention and care for perfect flavor!
