Kodo Millet Almond Cookies Recipe
Ingredients:
- 1 cup almond flour (or use 2 cups if not using powdered almonds)
- 1 cup powdered almonds (homemade, slightly grainy with small bits)
- 1 cup kodo millet flour
- 1 tsp baking powder
- ½ bar butter (softened)
- 1 cup maple syrup
- 1 tsp vanilla essence
Instructions:
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, whip the softened butter, maple syrup, and vanilla essence until light and creamy.
- In a separate bowl, combine the almond flour (or 2 cups if not using powdered almonds), powdered almonds, kodo millet flour, and baking powder. Mix well.
- Gradually add the dry ingredients to the wet ingredients, mixing until a smooth, fluffy dough forms. The grainy texture from the homemade powdered almonds adds a delightful crunch.
- Scoop small portions of the dough, roll them into balls, and gently flatten them into cookie shapes.
- Arrange the cookies on a baking sheet lined with parchment paper.
- Bake in the preheated oven for 12 to 15 minutes or until the edges are golden brown.
- Remove from the oven and let cool before serving.
Tip: Using homemade powdered almonds gives the cookies a lovely texture with small almond bits for an added bite. However, you can substitute with 2 cups of almond flour for a smoother finish.
