Kodo Millet Almond Cookies Recipe

Ingredients:

  • 1 cup almond flour (or use 2 cups if not using powdered almonds)
  • 1 cup powdered almonds (homemade, slightly grainy with small bits)
  • 1 cup kodo millet flour
  • 1 tsp baking powder
  • ½ bar butter (softened)
  • 1 cup maple syrup
  • 1 tsp vanilla essence

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, whip the softened butter, maple syrup, and vanilla essence until light and creamy.
  3. In a separate bowl, combine the almond flour (or 2 cups if not using powdered almonds), powdered almonds, kodo millet flour, and baking powder. Mix well.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until a smooth, fluffy dough forms. The grainy texture from the homemade powdered almonds adds a delightful crunch.
  5. Scoop small portions of the dough, roll them into balls, and gently flatten them into cookie shapes.
  6. Arrange the cookies on a baking sheet lined with parchment paper.
  7. Bake in the preheated oven for 12 to 15 minutes or until the edges are golden brown.
  8. Remove from the oven and let cool before serving.

Tip: Using homemade powdered almonds gives the cookies a lovely texture with small almond bits for an added bite. However, you can substitute with 2 cups of almond flour for a smoother finish.
