Delicious sweet potato with foxtail millet rice for lunch !sorry cannot see the millet it’s underneath!

Ingredients:

• For the Foxtail Millet Rice:
• 1 cup foxtail millet
• 2 cups water
• 1/2 teaspoon salt
• For the Sweet Potato:
• 2 large sweet potatoes, peeled and cubed
• 2 tablespoons olive oil
• 1/2 teaspoon ground cinnamon
• 1/4 teaspoon ground nutmeg
• Salt and pepper to taste
• For the Garnish (optional):
• Fresh herbs (such as parsley or cilantro), chopped
• Roasted nuts (such as pecans or almonds), chopped
• A squeeze of fresh lemon juice

Instructions:

1. Prepare the Foxtail Millet Rice:
• Rinse the foxtail millet thoroughly under running water until the water runs clear.
• In a medium-sized pot, bring the 2 cups of water to a boil. Add the rinsed millet and salt.
• Reduce the heat to low, cover, and simmer for about 20-25 minutes, or until all the water is absorbed and the millet is tender. Once done, fluff with a fork and set aside, keeping it covered.
2. Roast the Sweet Potatoes:
• Preheat your oven to 400°F (200°C).
• In a large bowl, toss the cubed sweet potatoes with olive oil, cinnamon, nutmeg, salt, and pepper until well coated.
• Spread the sweet potatoes in a single layer on a baking sheet lined with parchment paper.
• Roast in the preheated oven for about 25-30 minutes, or until the sweet potatoes are tender and slightly caramelized, stirring halfway through the cooking time.
3. Combine and Serve:
• Gently mix the roasted sweet potatoes into the cooked foxtail millet rice, being careful not to mash the potatoes.
• Taste and adjust the seasoning with additional salt, pepper, or spices as needed.
• Transfer to a serving dish and garnish with chopped fresh herbs, roasted nuts, and a squeeze of fresh lemon juice for an extra burst of flavor.
4. Enjoy Your Meal:
