Ingredients:

  • 100 grams butter or ghee (approximately 5-6 tbsp, adjust to preference)
  • 1/2 cup desi khand (brown sugar) or palm jaggery (use either)
  • 1/2 tsp baking soda
  • 1 tsp baking powder
  • 1 1/2 cups jowar atta (sorghum flour)
  • A splash of plant-based milk (if needed for binding)
  • Optional: cocoa chips for sprinkling

Instructions:

  1. Preheat your oven to 300°F (150°C). Prepare a baking tray by lining it with parchment paper or greasing it with butter.

  2. In a mixing bowl, cream together the butter or ghee and desi khand or palm jaggery until smooth.

  3. Add the baking soda and baking powder to the mixture and mix well until combined.

  4. Gradually add the jowar atta (sorghum flour) to the mixture and knead until a dough forms. If the dough is too dry, you can add a splash of plant-based milk to help with binding, but use sparingly.

  5. Roll the dough into small balls and flatten them slightly. Place them on the prepared baking tray, leaving some space between each cookie.

6. Optional: Sprinkle cocoa chips on top of the cookies for added flavor.

7. Bake the cookies in the preheated oven for about 20 minutes or until they are lightly golden brown.

8. Once baked, remove the cookies from the oven and let them cool on the baking tray for a few minutes before transferring them to a wire rack to cool completely.

9. Enjoy your homemade Jowar Atta Cookies as a nutritious and delicious snack!

Note: Feel free to adjust the recipe according to your taste preferences. You can experiment with different add-ins like nuts, dried fruits, or spices to customize the cookies to your liking.
