Moong Dal Kosambari is traditionally served at Karnataka festivals and wedding feasts. Not only is it delicious with it's simple and fresh flavours, kosambari is very quick to make and is very nutritious as well. This is a fresh and tasty salad made with soaked and uncooked lentils and chopped vegetables.
Ingredients for Moong Dal Kosambari Recipe : 1/2 cup moong dal split green gram soaked in water for 2 hours and drained, 1 cucumber chopped fine, 1 carrot grated, 1/4 fresh coconut grated, 1 green chilly finely chopped, finely chopped coriander leaves, salt to taste, 1 tbsp. lemon juice.
For tempering : 1 tbsp. oil, 1 tsp. mustard seeds, 2-3 sprigs fresh curry leaves.
Steps to Make Moong Dal Kosambari :

Mix all the ingredients of the salad - drained moong dal, chopped cucumber, grated carrot and coconut, chopped chilly and coriander leaves together. Add salt and lemon juice and mix well.

Now heat oil in a pan. Add mustard seeds and curry leaves and allow them to sputter.

Add to the salad and serve immediately.
