Niger Seed Salad Dressing

Feb 27, 2024

Ingredients:

  • 2 tablespoons niger seeds
  • 1/4 cup Bull Driven Olive Oil, Sesame or Peanut or Safflower Oil or niger seed oil from Organicsphere.com
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon honey (or maple syrup for a vegan option)
  • 1 small clove garlic, minced
  • Salt and pepper to taste
  • Optional: A pinch of crushed red pepper flakes for a bit of heat

Instructions:

  1. Toast the Niger Seeds:

    • In a small skillet, toast the niger seeds over medium heat for 2-3 minutes or until they start to pop and release their aroma. Be careful not to burn them. Once toasted, transfer them to a plate and allow them to cool.
  2. Blend the Ingredients:

    • In a blender or a jar with a tight-fitting lid, combine the toasted niger seeds, olive oil, apple cider vinegar, honey, minced garlic, salt, and pepper. If using, add the red pepper flakes now. Blend or shake well until the mixture is emulsified and the niger seeds are partially broken down. This will help release their nutty flavor into the dressing.
  3. Adjust the Seasoning:

    • Taste the dressing and adjust the seasoning with additional salt, pepper, or honey as needed. If the dressing is too thick, you can thin it with a little water or more olive oil.
  4. Serve:

    • Drizzle the niger seed salad dressing over your favorite salad greens and toss to combine. This dressing pairs wonderfully with mixed greens, fresh vegetables, and even grain-based salads.
  5. Store:

    • Any leftover dressing can be stored in an airtight container in the refrigerator for up to a week. Shake well before using again, as the ingredients may separate upon standing.

This niger seed salad dressing is a fantastic way to introduce the unique flavor of niger seeds into your diet. Its nutty and slightly spicy taste will add depth and complexity to your salads, making them even more enjoyable.
