- 1/2 cup cooked Kodo millet rice
- 1 apple, thinly sliced
- 2 tbsp mint leaves, finely chopped
- 1 small tomato, chopped
- 1 small cucumber, chopped
- 1-2 tsp chaat masala (adjust to taste)
- 1/4 cup fresh shredded coconut
- 2-3 tbsp lemon juice
- Optional: pomegranate seeds

1. Cook the Kodo millet rice according to package instructions. Let it cool.
2. In a large bowl, combine the cooked Kodo millet rice, thinly sliced apple, chopped mint leaves, chopped tomato, and chopped cucumber.
3. Add chaat masala according to your preference.
4. Mix in the fresh shredded coconut and lemon juice.
5. If using, sprinkle pomegranate seeds over the salad.
6. Toss everything together until well combined.
7. Serve and enjoy your soulful Kodo Millet Salad!
